Remove that, cut the fillets in to strips, lightly dust the strips with a mixture of flour, salt, and pepper, and then lightly pan fry. Throw them bitches in a tortilla of your choice with whatever else you want and you'll have some of the best fish tacos you'll ever get.
Edit: Just never, ever, freeze bluefish unless you have a flash freezer and even then it really isn't worth it. The cells in the meat rupture easily so you end up with some pretty mushy fish.
